Potato and Tomato Salad

If you’ve never tried the combination of Tomatoes and Potatoes in a salad, you should! Tossed in a light vinaigrette, the salad is quick to make and very satisfying.

Cook Time: 30 mins
Yields: 6-10 servings


  • 1 1/2 pounds of small potatoes
  • 1 large heirloom tomato or regular tomato
  • 2 tablespoons of olive oil
  • 2 tablespoons of melted butter
  • 2 tablespoon of chopped basil
  • 2 tablespoon of chopped parsley
  • 2 tablespoon of chopped chives


  1. Boil the potatoes in salted water for about 15 minutes or until fork tender then drain them.
  2. Place the boiled potatoes in a big bowl and add the olive oil and melted butter.
  3. Core the tomato then chop into chunks. Add to bowl.
  4. Rough chop basil, parsley and chives and add to bowl
  5. Add salt and pepper to taste.
  6. Mix and plate it!

Additional Info

You can chop the potatoes to bite size for presentation.
