Spring Pea Bruschetta with Ricotta Appetizer

When they are in season, I try to eat as many spring peas as possible. They are sweet and fresh tasting, mmmmm. A simple, easy but great tasting appetizer, give Spring Pea Bruschetta with Ricotta a try. We think you’ll like it.

  • Baguette (sliced)
  • 10 ounces of spring peas
  • 1/2 cup ricotta cheese (full fat)
  • 1/2 cup Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • Chopped scallion
  • Pepper


  1. Slice your baguettes to bite size and toast it on the oven.
  2. In a food processor, add your spring peas, ricotta cheese and half of the Parmesan cheese.
  3. Add some garlic powder and salt. Whisk it .
  4. Now, get your toasted baguettes and spread some of your spring peas mixture.
  5. You can add some chopped scallion on to add some more flavor and color then add some pepper.
