Roasted Zucchini

Zucchini is a great summer vegetable that requires little cooking and is a tasty source of fiber. Roasting it is a simple method to create a delicious side dish. Serves 4 to 8.

Cook Time: 30 mins
Yields: 4 to 8 servings


  • 2 or 3 zucchini
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • Lemon juice


  1. Remove the zucchini ends and cut into quarters about 1 inch by 1 1/4.
  2. Place on a sheet pan.
  3. Drizzle zucchini with a tablespoon of olive oil and add salt at pepper to taste.
  4. Using your hands, mix your zucchini well.
  5. Bake at 450 degrees for 30 minutes.
  6. Remove to a serving dish.
  7. For a final touch, squeeze in some lemon. Or, dress with balsamic vinegar, grated Parmesan cheese or whatever you like.
