Kitchen Dads Peach Tart

This tasty treat can be served warm, with a little ice cream or whipped cream, or cooled. It is a real crowd pleaser that comes from my friend, Chef Gina Stipo. Gina has an amazing book on Italian cooking. Serves 8.

Kitchen Dads™ - Kitchen Dads Peach Tart

Cook Time: 30 mins
Yields: 8 servings


  • 2 eggs
  • 1 cup of sugar or sugar substitute, like Truvia bake blend
  • 1/2 cup of melted butter
  • 6 tablespoons of all-purpose flour
  • 1 teaspoon baking powder
  • 3 cups fresh peaches, skinned, pitted and chopped
  • Powdered sugar


  1. Break the eggs into a bowl and add sugar. Whisk until it becomes fluffy.
  2. Add melted butter.
  3. Beat again until white and fluffy.
  4. Add flour.
  5. Add baking powder.
  6. Mix it again by folding. Don’t stir. Rather, fold it until blended.
  7. Gently add the peaches by folding them into the mixture.
  8. Butter or oil a spring-form pan
  9. Evenly distribute the batter in the pan
  10. Bake in a preheated oven at 375° for 45 minutes or until completely baked.
  11. Remove from the spring-form pan.
  12. Plate and dust with powdered sugar.
Note: You can substitute the peaches for plums or pears.
