Carrot, Apple and Beet Salad

This is a colorful, fresh salad with a citrus vinaigrette that will enhance your next meal. You will be delighted by how fresh and clean it tastes. Many people tell me this has become one of their favorite side salads. Serves 4.

Prep Time: 15 mins
Cook Time: 30 mins
Yields: 4 servings


  • 2 Cloves of Garlic, chopped
  • Juice of 2 Oranges or 1/2 cup commercial orange juice
  • Juice of 1 Lemon
  • Salt and pepper to taste
  • ¼ Cup Olive Oil
  • 2 Apples
  • 3 Carrots
  • 1 Fresh Beet (you can substitute pickled or canned beets if you cannot find fresh)


  1. To make the dressing, combine garlic, orange and lemon juices.
  2. Add salt and pepper.
  3. Slowly add Olive Oil as you mix the ingredients.
  4. To make the salad, peel and core apples.
  5. Remove tops and bottoms, then peel carrots and beets.
  6. Shred all fruits and vegetables using a food processor or an old-fashioned box grader.
  7. Mix shredded fruit and vegetables with dressing.
  8. Let sit for at least 30 minutes.
