Spaghetti Squash

There are three basic ways to cook spaghetti squash: boiling (not recommended), roasting, and microwaving. Once you get through its hard outer peel, it is filled with a delicious flesh. When you rake the flesh with a fork, it resembles spaghetti (thus the name) and can be substituted for pasta. Serves 2 to 4.

Yields: 2 to 4 servings


  • 1 large fresh spaghetti squash
  • Olive oil
  • Salt and pepper to taste


  1. Cut the squash in half lengthwise and scoop out the seeds with a spoon.
  2. Rub the inside of the squash with olive oil and season with salt and pepper.
  3. Bake on a sheet tray in a preheated oven at 375° for 30-40 minutes or until it is “fork tender”.
  4. As an alternative, leave the squash whole and using a fork, pierce the rind on all sides and bake whole on a sheet tray at 375° for about 1 hour. When cool to the touch, cut in half lengthwise. This method makes the rind much easier to cut through. Remove the seeds.
  5. Use a fork to rake out the inside of the squash. It should resemble spaghetti noodles.
  6. Now you can add whatever you want: Tomato sauce, Butter, Mozzarella cheese, Parmesan cheese
