One-Pan Fajitas

Not quite like the fajitas, you get at a restaurant but super easy as a one-pan meal.  The best part is that it will give you time to relax or be with family while they are cooking. Serves 4 to 8.

Yields: 4 to 8 servings


  • 1 to 1 1/2 bell pepper, sliced (any color you want)
  • 1 medium onion, chopped or cut in strips
  • 1 small zucchini, cubed
  • 1 tomato
  • Other vegetables you may like, such as mushrooms, yellow squash, etc.
  • 1 pound of chicken, skirt steak, or whatever you want, sliced into thin strips
  • 5 tablespoons of olive oil
  • 2 - 3 tablespoons of Mexican spices (cumin, garlic powder) or commercial taco/fajita seasoning
  • Lime


  1. In a bowl, place the meat or chicken, onion, zucchini, tomato, or whatever vegetables you are using, and drizzle with 5 tablespoon of olive oil, making sure that all ingredients are well coated.
  2. Add Mexican spices or commercial taco or fajita seasoning.
  3. Place all the ingredients on a pre-oiled or sprayed sheet pan.
  4. Bake in a 400 degrees oven for 25 minutes or until your meat is cooked.
  5. Finish with a squeeze of lime and cheese if desired.
  6. Serve with tortillas and salsa
