Roasted Mushrooms with Garlic and Parmesan

For this recipe, let’s do some roasted mushrooms on a sheet pan. Take the flavors up a notch with garlic and parmesan. It’s a super and easy to create dish and great to pair with any meal as a side dish.

Ingredients

  • 1 1/2 pounds mushrooms, thinly sliced
  • 3 tablespoons olive oil
  • 1/4 cup freshly squeezed lemon juice
  • Zest of 1 lemon
  • 3 cloves garlic, minced
  • 2 teaspoons herbs de province
  • 1/4 cup grated Parmesan
  • Sea salt and freshly ground black pepper, to taste

Method

  1. Preheat oven to 375 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
  2. Place mushrooms in a single layer onto the prepared baking sheet. Add olive oil, lemon juice, lemon zest, garlic, thyme and Parmesan; season with salt and pepper, to taste.
  3. Gently toss to combine.
  4. Place into oven and bake for 12-15 minutes, or until browned and tender, tossing occasionally.
  5. Serve immediately.
