Quinoa Spinach Salad

Serve this as a great tasting, healthy side. It’s more like a spinach salad with quinoa added in. While it has a strange name, pronounced Keen-Wha, it’s a great little grain that packs a nutritional punch and adds a little bit of nutty flavor. Add some grilled shrimp, fish, or chicken and it becomes a meal. Serves 4 to 6.

Yields: 4 to 6 servings


  • 3 tablespoon of red wine vinegar
  • 2 1/2 tablespoons of oilve oil
  • Juice of 1 lemon
  • 1/2 teaspoon of dried oregano
  • 2 cups of raw spinach
  • 1/2 cucumber, diced
  • 10 Kalamata olives, sliced
  • 1/4 cups of red and yellow peppers, chopped
  • 10 grape tomatoes, halved or quartered
  • 1 cup quinoa, cooked
  • 1/4 cup of feta cheese


  1. For the dressing: In a small bowl, combine red wine vinegar, olive oil, lemon juice and oregano. Set aside.
  2. Wash and rough chop spinach. Place it in a serving bowl.
  3. Add cucumber. Kalamate olives chopped bell peppers, and grape tomatoes.
  4. Add cooked quinoa and feta cheese.
  5. Pour dressing and give it a little toss.
