Smashed Potatoes

A nice twist on traditional mashed potatoes, “smashed” potatoes have a crispy, crunchy outside while the inside is creamy and wonderful. Be careful, they are addictive! Serves 4 to 8.

Yields: 4 to 8 servings

Ingredients

  • 1 dozen medium or golf-ball size potatoes
  • 1–2 stems of fresh rosemary or 1 tablespoon dried
  • 1/4 cup of olive oil
  • Salt and pepper to taste
  • Garlic powder
  • Chives

Method

  1. In a pot, boil your potatoes until they are fork tender. Cool potatoes in a colander.
  2. Strip rosemary leaves from its stem and give the leaves a little chop. Hint: strip the leaves off the stem by holding the rosemary vertically at its top and pull down to separate the leaves from the stem.
  3. Pour 1/4 cup of olive oil onto a sheet pan. Make sure that the sheet pan is well covered.
  4. Arrange your potatoes on the sheet pan leaving some space in between potatoes.
  5. Flatten potatoes with a potato masher or other tool.
  6. Salt and pepper to taste.
  7. Sprinkle some garlic powder.
  8. Add chopped rosemary.
  9. Pop your potatoes in a 450 degrees oven for 25 minutes or until the bottom of the potatoes are crispy.
  10. Remove to a serving platter and add some chopped chives for garnish.
