Portabella Stuffed Sweet Potatoes

Serve this as a side dish or a vegetarian main course. Serves 4 to 6.

Yields: 4 to 6 servings


  • 4 medium size sweet potatoes
  • 3 Portabello mushrooms or 6 - 10 baby bella mushrooms, minced
  • 1/2 red bell pepper, chopped
  • 1/2 red bell pepper, chopped
  • 1 medium onion , chopped
  • 1 garlic clove, minced
  • 1/4 cup olive oil
  • 1 cup cheddar cheese
  • Salt and pepper to taste


  1. Cook sweet potatoes until fork tender, either in a 425 degrees oven for 25 or 30 minutes—or individually wrap potatoes in plastic and microwave for 8 to 10 minutes.
  2. Meanwhile, prepare stuffing. In a skillet, sauté garlic and onion over medium heat until the onions are translucent, about 5 to 10 minutes.
  3. Then, add your minced mushrooms and bell peppers. Sauté for about 8 minutes or until mushrooms are cooked.
  4. Slice your sweet potatoes lengthwise into halves. Scooping out some of the potato with a spoon or fork and slightly break up the balance of the potato.
  5. Place a spoonful or two of the stuffing on each sweet potato half. Top it off with some cheddar cheese for extra flavor.
  6. Align them on a sheet pan lined with parchment paper and place them in a 425 degrees oven just until the cheese melts, about 7 or 8 minutes.
