Loaded Veggie Nachos

As much fun to make as it is to eat! Great as a snack or use a bigger pan for a meal. The key here is to customize the toppings to your personal taste. Have people create a section of the pan with what they like, then everyone is happy. Pair this with your favorite adult beverage and you have a real party. Serves 2 to 6.

Yields: 2 to 6 servings

Ingredients

  • 1 bag of nacho chips
  • 3/4 cup of Mexican blended cheese
  • 1/2 cup of red bell pepper, diced
  • 1/2 cup of red onion, chopped
  • 1 large tomate, chopped and drained
  • 2 small avocados. cut into small cubes/chunks
  • 1 cup Queso Fresco
  • 1/2 cup of cilantro
  • 1 lime, sliced

Method

  1. Coat a sheet tray with cooking spray and spread nacho chips evenly. (The spray will help preserve the chips’ crispiness.)
  2. Top with cheese.
  3. Bake in a preheated 350 degrees oven for 2 -3 minutes or until cheese is melted.
  4. Remove from the oven and add diced bell peppers, avocado, tomatoes, cilantro and Queso Fresco, or whatever you have on hand or like.
  5. Make sure that all chips are covered with veggies.
  6. Finish with just a squeeze of lime making sure you don't saturate the chips and make them soggy.
