Turkey Salad Sandwiches

Use leftover turkey to make an easy, delicious sandwich. This Turkey Salad recipe is versatile, as it can be used as filling for a mouth-watering leftover turkey sandwich served warm or open-faced, or chilled for a wrap. Serves 4 to 6.

Yields: 4 to 6 servings


  • 1 pound of leftover turkey (white or dark meat)
  • 1 granny smith apple, chopped (any apple would do)
  • 1/4 cup of pecans
  • 1/4 cup of cranberries
  • 1/4 cup of sour cream
  • 1/4 cup of mayonnaise
  • Salt and pepper to taste
  • Sliced bread and tortilla wraps


  1. Shred or chop leftover turkey. .
  2. In a bowl, place turkey and add chopped apple.
  3. Add pecans, cranberries, sour cream and mayonnaise.
  4. Salt and pepper to taste.
  5. Mix well.
  6. Add additional mayo and sour cream to taste. Be sure it is not too soupy.
  7. Build the sandwich with a couple of scoops and spread each slice of bread.
  8. If serving as an open-faced sandwich, you can top it off with chives, some cheese, or olives.
  9. Option: Place it in a toaster or broiler for a minute or until cheese melts.
