Greek-Style Salad

You don’t have to wait until your next visit to a Greek restaurant to get a Greek Salad. It’s colorful, with lots of different textures and flavors. This salad can be arranged for presentation in a large bowl or deconstructed as a make-it-your-own salad bar. Serves 8 or more.

Yields: 8 or more servings


  • 1 head of romaine lettuce, rough chopped
  • 1/2 cup mixed greens
  • 1/2 cucumber
  • 1 large tomato, cored and sliced or 10 - 12 cherry tomatoes halved
  • 1 large red onion, thinly sliced
  • 1 can of sliced beets
  • 1/2 can garbanzo beans (or chickpeas) rinsed
  • 1 block of feta cheese cut into 1/2 inch cubes
  • 1 cup of Kalamata olives, whole or rough chopped
  • 1/8 cup of red wine vinegar
  • 1/8 cup of olive oil
  • Salt and pepper to taste
  • 1 teaspoon of sugar
  • 1 lemon, juiced
  • 1 tablespoon of dried basil
  • 1 tablespoon of dried oregano


  1. Wash romaine lettuce and chop into nice big chunks. Place it in a salad bowl with mixed greens.
  2. On top, group and place cucumber, tomatoes, red onion, beets, beans, peppers, feta cheese and olives.
  3. To make the dressing, mix red wine vinegar, salt and pepper, sugar, lemon juice, basil and oregano. Add olive oil and whisk it all together.
  4. Once dressing is well mixed, gently add into your salad.
