Easy Breakfast Egg Cups

Doesn’t matter if you call them egg cups or egg muffins, we call them delicious. Easy to make with your favorite ingredients. A super convenient breakfast, try these healthy egg cups once and you’ll be back for more.

  • 2 ounces of spinach (thinly cut)
  • 10 cherry tomatoes (cut in half)
  • 3 large button mushrooms (sliced into chunks)
  • 1 bell pepper ( red, yellow or orange ) chopped
  • 2-3 ounces feta cheese
  • 12 eggs (whisked)


  1. Spray/grease your muffin pan first. This will help you make the cleaning process easier after.
  2. Arrange your veggies in the holes the muffin pan. In this recipe, I placed the spinach on the bottom followed by the cherry tomatoes, mushrooms and bell peppers.
  3. In a large bowl whisk your 12 eggs. This recipe requires 1 egg per cup. Once its whisked, pour them into each muffin cup on your pan.
  4. Break the feta cheese and break them into small bits and add put some in each cup, pushing it down a little into the mix.
  5. Top it off with some of the remaining veggies if you like.
  6. In a 375 degrees oven, place your egg muffin cups and cook it for 17 to 20 minutes.
