Avocado, Tomato and Cucumber Salad

This is a wonderful side for your summer grilling. It is light and easy to prepare. Serves 4 to 6.

Cook Time: 30 mins
Yields: 4 to 6 servings


  • 1 pound of Roma tomatoes
  • 1 cucumber
  • 1/2 red onion
  • 2 avocados
  • 1 bunch of cilantro or dill
  • 1 lemon
  • 2 tablespoon of olive oil
  • Salt and pepper to taste


  1. Slice tomatoes into chunks. Place it in a serving bowl..
  2. Slice cucumber into quarter inch thick pieces and add them to the bowl with the tomatoes.
  3. Cut red onion into thin slices and break up before adding.
  4. Cut avocados into chunks and add them to the bowl.
  5. Rough chop and add cilantro.
  6. Squeeze lemon juice over the salad mixture.
  7. Add olive oil
  8. Salt and pepper to taste.
  9. Toss all ingredients well.
